Wild Desert Spoons are harvested and returned to the hacienda where they are cooked in an earthen pit using mesquite wood and rocks from the river bed, after which they are crushed by hand using a mallet. Fermentation occurs with natural airborne yeasts and then distilled in an alembic copper still. 2 Desert Spoon hearts equate 1 bottle, that’s a lot of back breaking work!
