Description
Pox, an ancestral beverage that is made from corn, wheat and sugarcane by the Tzotzil Mayans of Chiapas, an area that is known for fighting back against the Spanish conquistadors and therefore preserved much of the ancient Mayan culture.
The word in fact comes from Poxna meaning pharmacy or place of medicine, as this was traditionally used for many physical ailments but also very interestingly within their religious ceremonies and rituals.
Fresh water, sugar cane, wheat and fermented corn are placed inside a vat and brought to the boil, this is then stirred for 12 hours using wooden sticks and then left to ferment together for at least 1 week. After the liquid is fermented it is then distilled.
