The name ‘Pensador’, which translates to the ‘thinker’ was given to this remarkable Mezcal, in honour of the time and consideration needed to create a single bottle.
The blending process for many spirits takes place post distillation, however in the Mezcal world it is more common to give the agave hearts time to become ‘one’ more naturally. This is achieved of course by cooking the Espadin and Madrecuishe agaves together, which are then crushed together, fermented and then distilled together simply as ‘one’.
